Why not start with dessert? We weren't even planning to get dessert today, but after two people ordered this gorgeous cream-filled, fruit-topped pie, and gushed over the deliciousness, we couldn't resist.
Minton's is a 5-table cafe on North Limestone in Lexington. But don't let the unassuming size of the building fool you. There are some fantastic gourmet happenings going on inside! If you are vegetarian, vegan, or vege-curious, this is a place to add to your favorites.
I had this tasty tomato bisque, which is blended but not completely pureed. The garlic, black pepper, and basil balance is one I can never get quite right, but Chef Ashley has this mastered.
For my entree, I enjoyed the tempeh salad sandwich. (Tempeh is a soy product that is firmer and a bit nuttier than tofu, and it dices and crumbles well.) This sandwich is the chef's take on a vegan chicken salad sandwich, and is so delicious that I can't seem to make my way through the menu at Minton's because I can't stop ordering this sandwich! Tempeh, chickpeas, sriracha, apple, and cilantro are so artfully combined that even a die-hard carnivore would leave satisfied. Because Minton's has such creative vegan and vegetarian dishes as well as those that contain meat, like their croque madam, and today's patty melt special, everyone can find a comfort that they fancy.
