Anyone taking an interest in the local fare of the Bluegrass has likely been served by one of Ouita Michel's kitchens, and we will eventually feature each one on Bluegrass Bites. Today, we present the "beetloaf," a standout feature found on the menu at Honeywood in the Summit at Fritz Farm.
This dish is one of my favorites from all of Ouita Michel's restaurants as it satisfies my cravings for a heartier dish with lots of color and flavor while packing a punch of healthy veggies. Now, while it's true that I absolutely cannot get enough of this dish, I would not say that it actually tastes like a meatloaf. It's shaped like a meatloaf and has the color of a meatloaf, but the beetloaf is it's own delicious combination of flavors. Unlike the many meat substitutes on the market right now, this one does not seem to be designed to mimic the flavor of meat. But it also is not mass produced or processed and instead is a beautifully-creative, farm-to-table meal that will absolutely delight taste buds that are bored with the "usual." We had ours with a side of Great Bagel milled cheese grits, because what Southern gal can resist any time cheese grits are on the menu?
